Drizzle chicken in oil and rub in blackened seasoning
Sear the chicken on medium heat for approx. 3mins, flip, add a splash of water and cover with a lid and cook for 8mins
Remove chicken, cover in a piece of foil and set aside
Add butter, paprika, onion & garlic to the pan and cook for 2-3mins. Making sure to scrape all the good bits from the bottom of the pan
Deglaze the pan with white wine and cook off alcohol for 1min
Add stock, herbs & seasoning and bring to a simmer
Add pasta and cover pot for 8-10mins (pending how long you pasta says it takes to cook), remove lid and simmer for a further 2mins
Add cream and cook for 1-2mins until thickened
Dice chicken into bite-sized pieces and add into the pasta along with the parmesan
Serve with a sprinkle of chopped parsley, parmesan cheese and fresh black pepper

Tips/Tricks
don’t be scared by the chicken “burning” it’s supposed to be blackened so it does need to char a little 😉
adding the splash of water to the chicken will stop it burning but also steam it a little keeping it tender
you can substitute chicken tenderloins or thighs if you prefer
my pasta took 11mins to cook (as per packet) so I cooked it for 8mins with the lid on before removing the lid for 2mins. Adjust the cooking time with the lid on according to your pastas instructions
