Blackened Chicken Pasta

Who wants some blackened chicken pasta? This epic one pot pasta dish is ready in about 20mins - isn't this what everyone wants? Well, everyone who is more interested in eating carbs and enjoying life than people who aren't 😉

Keep reading (not too much) and you too can enjoy this blackened chicken pasta and a delicious glass of Sisters Run wine in no time!

It's winter here in Brisbane and I was gonna say so bowls of pasta and comfort food is what's called for but hey - who am I kidding? Tasty bowls of pasta are always called for - no matter the weather!

I could add a load of fluff and a load of "keywords" and all that jargon but let's just go with a chunk of images, a few videos and the recipe. If you have any questions or anything you don't understand just hit me up @another_food_blogger on insta!

Blackened Chicken Pasta

Ingredients 

  • 200 g pasta I used farfalle
  • 1 chicken breast
  • 1 brown onion diced
  • 100 ml cream
  • 100 g parmesan cheese grated
  • 50 g butter
  • 4 cloves garlic crushed
  • 600 ml chicken stock
  • 100 ml white wine
  • 1 tsp smoked paprika

Seasoning

  • ½ tsp dried oregano & thyme optional
  • 1 tbsp blackened seasoning

Blackened Seasoning (if making yourself)

  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp cayenne
  • ½ tsp dried oregano
  • ½ tsp dried thyme

Essential Tools

  • Chef Knives
  • Chopping board
  • Large deep saucepan w/ lid
  • weighing/measuring utensils
  • Mixing spoon

Instructions

  • Drizzle chicken in oil and rub in blackened seasoning
  • Sear the chicken on medium heat for approx. 3mins, flip, add a splash of water and cover with a lid and cook for 8mins
  • Remove chicken, cover in a piece of foil and set aside
  • Add butter, paprika, onion & garlic to the pan and cook for 2-3mins. Making sure to scrape all the good bits from the bottom of the pan
  • Deglaze the pan with white wine and cook off alcohol for 1min
  • Add stock, herbs & seasoning and bring to a simmer
  • Add pasta and cover pot for 8-10mins (pending how long you pasta says it takes to cook), remove lid and simmer for a further 2mins
  • Add cream and cook for 1-2mins until thickened
  • Dice chicken into bite-sized pieces and add into the pasta along with the parmesan
  • Serve with a sprinkle of chopped parsley, parmesan cheese and fresh black pepper

Notes

Tips/Tricks
  • don’t be scared by the chicken “burning” it’s supposed to be blackened so it does need to char a little 😉
  • adding the splash of water to the chicken will stop it burning but also steam it a little keeping it tender
  • you can substitute chicken tenderloins or thighs if you prefer
  • my pasta took 11mins to cook (as per packet) so I cooked it for 8mins with the lid on before removing the lid for 2mins. Adjust the cooking time with the lid on according to your pastas instructions
