Pickled Onions

Pickled onions - these, in my opinion are something every household should have in the fridge.  SO simple to make, unbelievably tasty, cost effective and they last ages.  What's not to love about pickled onions?

Pickled Onions

You may remember seeing my post on pickled cucumbers and how I mentioned it is such an easy thing to do.  I have a few different recipes I use for pickling other items and here is my simple pickled onions one.  I always have a container in the fridge with these guys ready to go.  We love adding them to a sandwich, on a bacon cheeseburger, in salads and the other night I did some tandoori chicken skewers with naan bread, coriander, cucumber and the pickled onions worked a treat.

Elevating Food

I'm all about trying to elevate food at home for my wife and I.  When we have friends over for dinner I like to try pull out all the tricks I have to make their evening enjoyable.  This doesn't mean I am AWOL in the kitchen leaving my wife to do all the chatting!  I tend to plan the menu ahead and make it so that on the night there isn't a ton of pots needing stirred or pans needing tossed.  So in saying that the way I find it easiest to elevate the mid week meals and take the weekend ones up a few levels is in having delicious go to condiments in the fridge.  That way when it comes to it I can lob it on top of that homemade burger or "artfully" place it alongside the home cured salmon.

Condiments

Speaking of these there are defo a few simple recipes I can give you.  So check em out that will hopefully help step up both your midweek and weekend meals.  Think homemade harissa that goes beautifully with this delicious Lamb Burger.  A delicious tomato chili jam that is killer as a dip for your fav chips or inside 2 slices of bread with a few other things!  These are just a few things that I make regularly for myself and Mrs AnotherFoodBlogger to enjoy.  Believe me when I say having these in your back pocket (fridge) will seriously help upgrade your meals!

I hope you enjoy this recipe for pickled onions and find as much uses for it as I do.  Also, if you are wondering about the containers I use they are by far the handiest items I own in the kitchen.  I use them for EVERYTHING and they make for a slightly more organised fridge too.

Pickled Onions

Ingredients 

  • 3 red onions
  • 6 peppercorns
  • 2 dried red chili
  • 2 sprigs thyme
  • 1 bayleaf
  • 1 garlic clove
  • 2 tsp salt
  • 2 tsp sugar
  • 2 cups white vinegar rice or apple works too
  • .5 cup water

Instructions

  • Slice the onions to whatever desired thickness you like. 3mm is roughly what I do mine but it ain't an exact science *see tips*
  • Place onions in a sieve and blanch the onions by pouring boiling water over them quickly.
  • Mix water, sugar, vinegar and salt together.  Stir until dissolved. Then add the remaining spices and blanched onions.
  • Store in an airtight container in the fridge.  They will take a minimum of 3 hours to have a nice pickled taste but I tend to leave them overnight.

  • sharp knife or mandoline
  • airtight food storage container
  • sieve
  • kettle
Tips/Tricks
  • using a mandoline will greatly speed up the onion cutting process and will also guarantee even slices
  • pickled onions will last up to 6 months in the fridge -  not in my home though!

    I love pickled onions but I had no idea how to make them myself. They go so well on top of tacos or with nachos.

    Ooh these look yuumy and so simple to make too. My daughter loves all things sour and regular pickled onions so these would be great to make as a little accompaniment I'll have to bookmark this!
