Grilled Lamb & Black Pudding Skewers

It doesn’t get easier than cooking things on a skewer.  I have teamed up with Clonakilty black pudding (which makes me very happy as I love the stuff!) so mixing it up with some delicious lamb mince, pairing it with a simple parsley salad and it’s job done!!  Keep scrolling to read my ramblings and to get in on some grilled lamb skewers action.

I think one of the best things about living in Brisbane is year round sunshine.  Don’t get me wrong when it rains it rains HARD and summer time I’m a sweaty mess!!  But, the fact I can crank up my BBQ any and every day makes me a happy man.  Especially when my BBQ gets these delicious grilled lamb skewers on it!

Moving House AGAIN!

Currently we are in the process of looking for a new home.  The beautiful home we live in is owned by friends of ours and they are selling it to live the Aussie dream of coastal living, sun, the sea and plenty of surf.  Am I jealous - just a touch!!  This means house hunting for us right now and trying to find the balance if enough kitchen (with gas) &storage space for all my cooking stuff.  Not to mention enough room for all the toddlers crap, and that doesn’t add any more time to my better half’s daily commute.  Not a fun task!  Especially when you are done it as many times as we have.  In the last 8 years I have moved continent twice and this will be by 8th home.  Can’t wait to finally settle down!

Keeping it Simple

Grilled Lamb Skewers

Sometimes when I cook I tend to add a lot of ingredients into dishes.  I have a fairly well stocked pantry so plenty to play with and I simply forget that the average person may not have the same.  If you don’t well my best advice is over time to stock up on dried herbs & spices. A trip to your local Asian market is a great way to do this.  It’s often cheaper, you can buy in larger quantities and also pick up some excellent things you didn’t even think you needed!!

So with this grilled lamb skewers dish I’ve decide to limit the number of ingredients and to keep the whole thing simple.  The skewers themselves are comprised of 2 ingredients along with some seasoning and the salad just a handful.  Taking only a few minutes to cook and they are great for a quick meal.  You are also left with a delicious and pleasing on the eye dish too!

Black Pudding

For those of you living in Ireland or in the UK black pudding is probably a staple in your home.  Or at least you are well aware of it.  It’s certainly available worldwide but I have found people tend to be very apprehensive of it and it’s a little harder to come by.  Trust me when I say it’s truly delish and incredibly versatile too.  Simply fried with eggs, mixed into mash potatoes, crumbled on top of beetroot hummus (my own recipe!) or here as part of a grilled lamb skewer.  If you are in Oz head down to Woolies and grab some.  In Ireland pretty much any food shop has it.  I guarantee you won’t be disappointed!

Grilled Lamb & Black Pudding Skewers

Ingredients 

Skewers

  • 200 g clonakilty black pudding removed from skin and chopped
  • 500 g lamb mince
  • salt
  • pepper

Salad

  • 20 g parsley leaves
  • 1/2 red onion sliced
  • 2 tbsp capers
  • 75 g feta cheese crumbled
  • 100 g cherry tomatoes chopped in half

Salad Dressing

  • 1 tsp oregano
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • salt
  • pepper

Instructions

Skewers

  • Mix black pudding, lamb & salt and pepper together and roll into 75g balls
  • Shape black pudding balls into sausages and place on skewer (2 – 3 per skewer) & brush with olive oil
  •  Set BBQ to a medium – high heat and grill skewers for 7 – 8 minutes, turning every 2 minutes

Salad

  • Mix all salad dressing ingredients together and whisk until mixture thickens slightly
  • Mix all salad ingredients together and toss with salad dressing

Notes

Essential Tools

• chopping board
• sharp knives
• BBQ skewers
• BBQ (or grill pan)
• mixing bowl
• tongs
• whisk or fork

Tips/Tricks

• you can use a grill pan or frying pan if a BBQ isn’t available or weather doesn’t permit
• it’s easiest to roll the meat into balls and form the sausages on the skewers. I found that it clings better to the skewer that way
• alternatively you can make them into little patties and fry them if skewers aren’t available
